Foil-Packet Potatoes and Sausage

One of my favorite meals to make is foil packet potatoes and sausage. It’s so simple, but it’s always so delicious. I love that I can just throw everything together in a foil packet and cook it on the grill. It’s perfect for a summer meal.

The best part about this recipe is that you can customize it however you want. You can use different types of sausage, or you can add in some veggies. I usually just stick with red potatoes and smoked sausage, but it’s fun to mix things up sometimes.

This is definitely a meal that the whole family will love. The potatoes are tender and delicious, and the sausage is flavorful and cooked perfectly. It’s the perfect easy summer meal.

Recipe Ingredients:

  • 3 pounds red potatoes, cut into 1/2-inch cubes
  • 2 packages (12 ounces each) smoked sausage links, cut into 1/2-inch slices
  • 4 bacon strips, cooked and crumbled
  • 1 medium onion, chopped
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • Additional chopped fresh parsley, optional

Recipe Instructions: Preheat grill to medium-high heat.In a large bowl, combine all ingredients.Divide evenly among four 18-in. squares of heavy-duty foil; fold to form packets.Grill, covered, for 25-30 minutes or until potatoes are tender, turning once.Open packets carefully to allow steam to escape before serving.

Tips for Making Foil-Packet Potatoes and Sausage

You can use any type of sausage you like in this recipe. I usually use smoked sausage, but you could also use kielbasa or even bratwurst.

If you want to add some veggies to this recipe, you could try chopped bell peppers or mushrooms. Just add them in with the other ingredients.

Be careful when opening the foil packets. The steam can be hot, so open them slowly and carefully.

If you want, you can sprinkle some additional chopped fresh parsley on top of the potatoes before serving.
